Risotto is a fan-favorite in my house, but it takes so long to induce that there’s no way Mama is constructing it unless it’s a special occasion.
Well , now that we’ve discovered this recipe, I’m not so sure she’ll have an excuse not to make it for the family!
It has everything a traditional risotto recipe has, minus the mundane stirring and hovering over the stave for hours on end. This recipe, start to finish, takes under 40 minutes, and that’s allowing a little buffer time to sip on some wine while you cook!
No shame in a little wine for the cook, plus one glass of wine daily has multiple health benefits!
